Ingredients
- 113 grams (½ cup) butter
- 225 grams (8 ounces) white button mushrooms, sliced
- 1 small onion, chopped
- ½ cup plain flour
- 2 cups low sodium chicken broth
- 1 cup milk
- ½ tsp salt, or more to taste
- ¼ tsp fresh ground black pepper
- ½ tsp onion powder
- 3-4 cups chicken (boiled or poached, baked, rotisserie), chopped
- ½ cup heavy cream
- 1 cup frozen green peas
- 120 grams roasted red peppers in a jar/bottle, drained well and diced
Instructions
- In a large pot over medium-high heat, sautė the mushrooms in melted butter. Cook until tender and lightly browned, about 5 minutes.
- Add the onion and cook until soft, 6-8 minutes.
- Add the flour gradually and stir to mix over medium heat.
- Pour 1 cup of chicken broth and whisk until flour dissolves. Add the rest of the chicken broth.
- Stir in the milk and add salt, fresh ground black pepper, and onion powder. Simmer for 10 minutes.
