Easy Chicken ala King

Ingredients

  • 113 grams (½ cup) butter
  • 225 grams (8 ounces) white button mushrooms, sliced
  • 1 small onion, chopped
  • ½ cup plain flour
  • 2 cups low sodium chicken broth
  • 1 cup milk
  • ½ tsp salt, or more to taste
  • ¼ tsp fresh ground black pepper
  • ½ tsp onion powder
  • 3-4 cups chicken (boiled or poached, baked, rotisserie), chopped
  • ½ cup heavy cream
  • 1 cup frozen green peas
  • 120 grams roasted red peppers in a jar/bottle, drained well and diced

Instructions

  • In a large pot over medium-high heat, sautė the mushrooms in melted butter. Cook until tender and lightly browned, about 5 minutes.
  • Add the onion and cook until soft, 6-8 minutes.
  • Add the flour gradually and stir to mix over medium heat.
  • Pour 1 cup of chicken broth and whisk until flour dissolves. Add the rest of the chicken broth.
  • Stir in the milk and add salt, fresh ground black pepper, and onion powder. Simmer for 10 minutes.
  • Add the chicken, heavy cream, green peas, and roasted red peppers and stir to combine. Cook until heated through. Taste and adjust seasoning. Transfer to a serving plate.
