Beef, Mushrooms & Ginger Stir-Fry

What is it, you ask? It’s the beef, mushrooms and ginger stir-fry: a fragrant dish with tender beef strips, loaded with mushrooms, and simmered in tasty deep-flavoured sauce. 

It’s easy to make and you will love the fact this can be on your table for dinner in 30 minutes or less! 

This lovely stir-fry is inspired by Marion’s Kitchen collection of recipes.

Beef, Mushrooms & Ginger Stir-Fry

Servings: 4

Ingredients

  • 400 grams beef, thinly sliced
  • 2 tbsp vegetable oil
  • 3 garlic cloves, roughly chopped
  • 1 onion, sliced
  • 4 cm piece ginger, finely julienned
  • 300 grams mushrooms, halved or quartered
  • ¼ cup sliced spring onions/scallions

Marinade

  • 2 tbsp soy sauce
  • ½ tsp baking soda
  • 3 tsp cornflour (cornstarch)

Stir-fry sauce

  • 3 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 2 tsp sugar
  • 2 tsp white vinegar

Instructions

  • Combine beef with the marinade ingredients. Set aside.
  • Combine the stir-fry sauce ingredients and set aside.
  • Heat oil in a wok or large pan over high heat. Add the beef and allow to sear before stir-frying. Add the garlic, onion and ginger, and stir-fry for one minute. Then add mushrooms and stir-fry for 2 minutes.
  • Pour over the stir-fry sauce and toss to combine.
  • Toss through some scallions/spring onions. Transfer to a serving plate.
