What is it, you ask? It’s the beef, mushrooms and ginger stir-fry: a fragrant dish with tender beef strips, loaded with mushrooms, and simmered in tasty deep-flavoured sauce.
It’s easy to make and you will love the fact this can be on your table for dinner in 30 minutes or less!
This lovely stir-fry is inspired by Marion’s Kitchen collection of recipes.
Beef, Mushrooms & Ginger Stir-Fry
Servings: 4
Ingredients
- 400 grams beef, thinly sliced
- 2 tbsp vegetable oil
- 3 garlic cloves, roughly chopped
- 1 onion, sliced
- 4 cm piece ginger, finely julienned
- 300 grams mushrooms, halved or quartered
- ¼ cup sliced spring onions/scallions
Marinade
- 2 tbsp soy sauce
- ½ tsp baking soda
- 3 tsp cornflour (cornstarch)
Stir-fry sauce
- 3 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tsp dark soy sauce
- 2 tsp sugar
- 2 tsp white vinegar
Instructions
- Combine beef with the marinade ingredients. Set aside.
- Combine the stir-fry sauce ingredients and set aside.
- Heat oil in a wok or large pan over high heat. Add the beef and allow to sear before stir-frying. Add the garlic, onion and ginger, and stir-fry for one minute. Then add mushrooms and stir-fry for 2 minutes.
- Pour over the stir-fry sauce and toss to combine.
- Toss through some scallions/spring onions. Transfer to a serving plate.
