Chosilog (Chorizo-Fried Rice-Egg)
Coined as Chosilog - a combo of Spanish chorizo slices, fried rice (sinangag), and egg (itlog). It is usually served for breakfast but I don't see why you can't have it for lunch or even dinner.

- 200-250 g Spanish chorizo (2 pcs.)
- Oil (fat rendered from the cooked chorizo)
- ½ small onion, diced
- 1 tsp dried oregano
- 3 garlic cloves, peeled and minced
- 3 ½ cups cooked rice (day-old)
- 2 tbsp tomato ketchup
- Salt and pepper, to taste
- 4 eggs
Slice the chorizo into rounds and fry in an ungreased pan over medium heat. Cook until lightly browned and caramelized on the edges.
Transfer the chorizo onto a plate and set aside. Leave the oil fat rendered from the cooked sausage.
Saute the onion and dried oregano for about 3 mins or until the onion has softened. Add the garlic and fry for 30 seconds.
Stir in the rice and break it up as it cooks.
Add the tomato ketchup and stir to coat the rice.
Return the cooked chorizo back into the pan and mix it with the rice.
Taste and add salt and pepper as necessary. Transfer the chorizo fried rice to a serving dish.
Fry the eggs as you like them. Then serve the chorizo fried rice with the eggs. Enjoy!
