Chosilog (Chorizo-Fried Rice-Egg)

Coined as Chosilog - a combo of Spanish chorizo slices, fried rice (sinangag), and egg (itlog). It is usually served for breakfast but I don't see why you can't have it for lunch or even dinner.

Ingredients

  • 200-250 g Spanish chorizo (2 pcs.)
  • Oil (fat rendered from the cooked chorizo)
  • ½ small onion, diced
  • 1 tsp dried oregano
  • 3 garlic cloves, peeled and minced
  • 3 ½ cups cooked rice (day-old)
  • 2 tbsp tomato ketchup
  • Salt and pepper, to taste
  • 4 eggs

Instructions

  • Slice the chorizo into rounds and fry in an ungreased pan over medium heat. Cook until lightly browned and caramelized on the edges.
  • Transfer the chorizo onto a plate and set aside. Leave the oil fat rendered from the cooked sausage.
  • Saute the onion and dried oregano for about 3 mins or until the onion has softened. Add the garlic and fry for 30 seconds.
  • Stir in the rice and break it up as it cooks.
  • Add the tomato ketchup and stir to coat the rice.
  • Return the cooked chorizo back into the pan and mix it with the rice.
  • Taste and add salt and pepper as necessary. Transfer the chorizo fried rice to a serving dish.
  • Fry the eggs as you like them. Then serve the chorizo fried rice with the eggs. Enjoy!
